Specific intervals between notes define the makeup of various guitar scales and their modes. While sometimes two scale notes are played at the same time for effect, this is not a chord, it is called an interval. Scales are generally played with a pick, along with legatto, tapping, or even fingers (although you don't generally think of lead scale runs with just the right hand fingers, ie. fingerpicking).

Many times guitar players either get good at playing lead guitar and understanding how to play guitar scales while being very weak at playing guitar music chords or guitar arpeggios. Good guitar education is essential to be a well rounded player.
